A small and meltingly soft goats’ cheese, washed in Somerset Cider Brandy and then wrapped in vine leaves. Unpasteurised and non-vegetarian, maker Pete Humphries from Whitelake Diary in Badbury, Somerset drew on the character of the French Epoisses in devising the cheese.
Eve makes it an interesting addition to any cheese board with the contrasting green of the vine leaf and the white bloom of the rind. When ripe, the interior of the cheese is almost entirely runny, and the flavour is full and rich but not harsh, with an appealing citrus freshness.
Vegetarian rennet, unpasteurised milk
‘Tor’ a soft goat’s cheese rolled in ash is also available,
