Antipasto Capriccioso, a mixed antipasto of chunky vegetables in sunflower oil with a little mint and oregano.

Traditionally eaten in Sicily during the winter months when fresh vegetables are scarce, this antipasto can be eaten as part of a mixed platter of meats and cheese, stirred into pasta or eaten warm as an accompaniment to a meal of meat, chicken or fish.

Wonderful in a rice salad.
