Truffle Hunters – an autumn prize
October is the start of the short season for fresh white Trufflesin Italy, particularly in the northern regions of Piedmont, Tuscany, Umbria or Le March. The farther south you go, the scarcer they become due to climate and soil. The drought of the past months threatens the growth of tuber magnatum pico, with rain the key element to its development. It is necessary that the ground is wet both for germination and maturation. Only then, after approximately 6 weeks, can a good Truffle be found.
The white Truffle with its whitish-brown, smooth surface is the most prized Truffle of all. Adding a few shavings will usually double the price of a savoury pasta or creamy risotto dish. This fragrant and flavourful tuber with pleasant hints of …..fermented cheese and garlic. It is also used in everyday Italian cuisine such as eggs at breakfast time.
