Product Description
A deliciously soft lactic style Ewe’s milk cheese has been dusted with wood ash, developing a mottled grey-white appearance as it matures and the mould grows through. It has a creamy and slightly citrus flavour and should show some surface ripening and the appearance should change from the pale grey of the ash when young, to a thicker and more natural mould rind dominated by greens and blues.
Named as a homage to the difficult and famous cobbled cycling stages by Roger (Director).
In the shape of a flat topped pyramid, Pavé Cobble has been a huge hit with cheese tasters this year and would be a welcome addition to the cheeseboard.
Made with unpasteurised milk and vegetarian rennet
