Product Description
All the Rainbow Trout are grown at an extensive and low stocked farm near Hungerford on the clear flowing waters of the river Dun. The trout are given as much space as they need to develop and grow as they would do in the wild which provides an enhanced and delightful flavour. The farm was established over 100 years ago in 1907 and today it boasts over 60 ponds covering 19 acres. The topographical position of the Farm, near Hungerford, is unique because it is fed by the River Dun whose chalk spring source is only seven miles away. Two pure spring brooks also feed the supply.
There is no fire in a cold smoker, purely a trail of oak sawdust fuelled with the hot embers from the hot smoker, producing a lot of smoke but very little heat. It is therefore a much longer process than hot smoking over fire, taking 15 -20 hours.
