Product Description

Manchego Curado, a semi-hard authentically made unpasteurised sheep’s milk cheese from the La Mancha region of Spain.  A semi hard cheese, with flavours sharpening with age, as does the texture.  The ivory colour crystallises as seasons pass, going from open to granular and flaky over the course of a year.  As the cheese hardens, the flavours deepen, becoming more rounded and toasty.

When the cheese is ready for maturing, it is soaked in brine, a mixture of water and salt. It is then set to age and brushed with olive oil, locking in moisture and flavour while still allowing it to breathe.   The traditional use of grass moulds leaves a distinctive, characteristic zigzag pattern on the rind, which is not really edible.

Sold at different ages, from the fresh cheese at 2 weeks, semi-curado at around 3 months, curado at 6 months and Viejo for a year.

Ideal pairings with Manchego are Sherry, the traditional Membrillo (quince paste), honey, marmalade or other fruit jams and almonds.
