Vin Santo (Holy Wine) is a style of Italian dessert wine made from drying the freshly harvested grapes, often on straw mats or by hanging on racks indoors for about 3 months. They loose about 60% of their original weight and are then gently pressed, fermented and then aged in small oak barrels for a minimum of 3 years.
Although sweet, Vin Santo is lighter than many dessert wines and is traditionally served with Cantuccini biscuits or the wonderful dried fruit and nut Panforte at the end of a meal. With aromas of apricots and orange blossom, followed by caramel and raisins – a rich palate with a hint of honey on the finish. It is also delicious with Panettone and sweet fruit or pastry desserts. However, don’t be afraid to bring Vin Santo out with the cheeseboard!
