Pollock with tomato & olive sauce served with pasta

Pollack is increasingly popular and a great alternative to Cod.
Great served with Busiate pasta and additional olives for garnish

Prep & cooking time about 20 mins & serves 2

Ingredients

2 Pollock fillets 170-200g
1 jar Gastro Nicks Organic Sicilian Tomato sauce with olives
1 tbsp Gastro Nicks capers in brine
I tblsp pitted Sicilian olives
50g Shiitake mushrooms sliced
1 garlic clove, peeled & chopped
1 tsp Gastro Nicks dried oregano
2 tbsp Gastro Nicks Sicilian extra virgin olive oil
200g Gastro Nicks Busiate pasta
Gastro Nicks semi aged Pecorino (Normanno), grated

  1. Steam the Pollock for 8-10 mins
  2. Add olive oil to a sauté pan and sweat the garlic. Add mushrooms, capers, and season with oregano
  3. Add Pomodoro sauce and simmer for 5 mins
  4. Meanwhile cook the Busiate pasta
  5. Drain the paste, spoon on to plates, place the Pollack fillets on top and serve with the Pomodoro sauce finished with grated Pecorino
